Description:
Warning: This ain't Big Mama's from the stove & to the oven puddin'. This is for us on-the-go and/or just plain ol' lazy folks who enjoy a good dessert. This is easy on the wallet & the utilities.
Ingredients:
4 cups of milk (I use 2%.)
1 - 9 oz. box of Jell-O Sugar Free Banana Cream Instant Pudding
1 - 9 oz. box of Jell-O Sugar Free Cheesecake Instant Pudding
3 to 4 bananas (sliced or diced - your preference)
1 large box of reduced-fat vanilla wafers (I like a lotta wafers so I use a box & a half.)
1 large bowl of Cool Whip Lite
2 teaspoons of pure vanilla extract (not flavoring)
Directions:
1. Using an electric mixer, whip the pudding & milk until the mixture is no longer runny & a nice pudding consistency
2. Layer the bottom of your bowl/dish with wafers (reserve some cookies to garnish)
3. Spoon about 1/3 of the pudding mixture atop of the wafers
4. Add a layer of sliced/diced bananas according to your preference
5. Spoon on a layer of Cool Whip
6. Repeat layering steps 2 thru 5 until complete.
7. Refrigerate at least 3 hours to allow the dessert to set.
I usually refrigerate overnight.
So easy even Kels & Red won't mess it up! *snicker*

ReplyDeleteI did some spring cleaning last week & found some cake flour (exp. in 2003) that I had every intention on using with one of my granny's recipes. Needless to say, that cake was never baked. *smh at myself*
Hey Moni, I have seen some recipes where they cook the nana pudding in the oven ..(on the side of the nilla wafers box). Have you ever tried that? I just want to know what it's like. I know how I make it and oooo it's so good. Gosh that picture sure makes me want some right now.
ReplyDeleteThat's how my granny taught me, but it's been eons since I went thru all that. My son doesn't like bananas, my uncle can't eat them (kidney transplant) and my last boyfriend was allergic to them. I had gotten out of the habit until a friend made one & it was good (just not enough wafers) and decided to try the easy route. As you can see, I tweaked it a lil bit & it's been a hit so far.

ReplyDelete@ Sunshine & Shan - if it's just for you divide the recipe in 1/2. The recipe is too much for one & for best results it should be eaten in 48-72 hours.

ReplyDeleteI can actually do a mean banana nana puddin... but its the quickie version also... cuz I'll be damned if anything I cook or make has to be over 30 minutes on the stove or oven... But dang... do you know how much a box of nilla wafers cost.... sheeeeesh... its either that or a gallon of gas...
The cheap ones work just as well. They won't know unless you tell them.

ReplyDeleteMy moms made the double broiler old school 'Nana pudding for today. But she cheated on the topping, opting instead to just putting some cool whip on top. And it was much less sweet than the instant pudding version. This recipe sounds good though. I could give it a whirl and see how it turns out!
