Make it Like Mama & 'Nem Do/Did

Are there any dishes you enjoy but you just can't seem to make it like mama 'nem do/did?

I'm a baker, not a cook.  I've almost mastered most of my granny's desserts, but I can't make a meatloaf to save my soul. 8-|  I've tried different recipes & it's always a disaster...at least to me because it's not like Muda's.  I've given up on meatloaf...period.

  2. For me... Im not a great cook in the first place... I spent many years in the kitchen with my mom while she made xmas and thanksgiving dinner and so forth... I helped, but i didnt cook... So now if I had to do it myself,,,, well ummmm I dont know how it would turn out...lol

    But I love Peach Cobbler... my mom never made it and my granny doesnt much have energy to do so any more... The best peach cobbler I had was during an overnight stay in the hospital some years ago.. I swear I've tried it a few times, with recipes I've found but i just cant get it right...

    So, Im calling out to all that know how to make it and make it RIGHT, help a sistah out... Mo, if you a baker you gotta know how to make peach cobbler... I would Pay and send you a freezer pack for overnight shipping..... Im serious... lol

  4. HOME-MADE BAKED MAC N CHEESE!!!!!!!!

    I tried to make this one day and ended up throwing out the entire pan...it was THAT awful! SMH.....

  5. Anything that I have to sit there and watch for a long period of time is not the best option for me... I cant tell you how many times I left something on the stove too long and remembered when it started to burn... I have no patience for cooking... lol

  6. Dressing!!! I can't make a pan of good dressing like my mama and grannies for the life of me. I finally mastered the mac n cheese from scratch and I have to admit, mine is damn good. But I want to be able to make dressing like theirs and stop depending on Stove Top. LOL

  8. My great-grandmama's mint sweet tea...mainly because she refused to give anyone the recipe and it died with her.

    My dad's spaghetti. I don't know what he does different, but it's so good!

    My grandmother's peach cobbler. She's from down south so you know it's right!

    I can throw down on some mac n cheese. I usually have to make a turkey roaster full on holidays and I MIGHT bring home a cup.

  9. Ya'll gone have to cough up those mac n cheese recipes. Some of ya'll might recall me writing about my mom's soul food cooking lessons she's handing down to me. But I swear, I do pay attention but it seems that when the training wheels come off, I can't duplicate any of her dishes. Otherwise, I will have to stick to baking. I make a great sweet potato pie!

  14. That's me. For my mac n cheese I think the key is shredded sharp cheddar, colby/jack and heavy whipping cream. Oh and real butter. I can't help you with the measurements.

He waited til the last minute to give out details despite requests for info months ago. So I had to take off work at the last minute. That boy will fuck up a wet dream. But I gotta go see him march.   21. Shoot I cooked everything better than my Mom does, and that's the truth!!! When I started cooking I would do little signature things and she would say "ummm, you make this better you can cook this from now on. She did that with me on Lasagna, BBQ chicken, herbal rice, and other dishes.

  22. I can make mac n cheese my way however, my lil brother has one that will make you go insane about. I want to learn to make this one i seen on the food network where it uses 7 different cheeses but that might be a bit rich for my hips.

  23. Now i can make dressing but it's nothing like my auntie or my momma. And i happen to use veggie stock in mine and no turkey meat at times, but it's still good.

  25. I still have to work on my stuffing recipe. I'm from NY I call it Stuffing!!! LOL Mine did not come out as moist as I wanted it to. So I need to practice that again.

Well I can say that I don't like Sweet Potato pie so I don't know how to make it but I would like to learn cause i know my husband may want some one day and I don't think my auntie is going to want to come over and make my husband a pie. I do like pecan pie but w/o the pecan's but i don't know how to make that either.

    I can make a good banana pudding and a wonderful chocolate silk pie though and of course i can make meat loaf, beef , turkey or ground chicken.

    I had no idea stuffing was a regional thing. I just thought it was a black/white thing. Kind of like those east cost folks and their "soda"!!! Dammit it's POP!!!!!!

  37. Mommy is originally from Memphis, TN, so first time we went to visit and we were offered "pop" I was like what the heck is pop? So when they said you know Coke, Pepsi I said ohhhhhhhhhhh SODA!!!! ROFL!!!

  43. Girl! My grandpa called my granny's homemade biscuits "catheads". He was from Arkansas & apparently it was a southern thing. Whatever they were, they were good enough to be a meal alone.

  47. Mama says my chili is better than any she's ever tasted. I can't touch her on some potato salad though. And there isn't a human ever born that can out do my Grandma on a peach cobbler.

  50. I'm not sure if you make stuffing or dressing cause usually dressing has cornbread mixed in it and requires a bit more liquid. Just make sure you have enough stock on hand and in that case you may want to purchase the stock thats in those cartons and not from the can. Not only because of the canned taste but because there is more in those cartons. Also, sometimes making dressing or stuffing is not about measuring but about eyeballing the right ingredients and tasting as you go.

    I am particular about my dressing or even stuffing cause some folks will try and put shrimp, raisins, apples or what ever and i'm just a plain jane and i like a little onion and maybe some celery (although i can't stand celery).

  52. I attempted to make cornbread one year for me and my then boyfriend. Called my grannie (God rest her soul) and she talked me through the entire preparation and cooking. It was hard as a rock and i never made it again. I don't even like cornbread but i do use it for my dressing.

  54. So do you put beans in your chili? What kind of meat do you use? Do you like your chili thick or runny? Chili is like Clam Chowder there are differences every where, and I am very particular about my chili.

  55. I do use beans. I use ground sirloin and lots of it. Not a fan of runny chili. I prefected my recipe while I was stationed in Texas.
